Ingredients
8 Spanish onions, finely sliced
70 ml soy sauce
4 tbsp of olive oil
50g Butter
1 glass Red wine
70 ml Red wine vinegar
2 tbsp brown sugar
2 cloves of crushed garlic
Method
Heat a large fry pan and add a splash of olive oil and the butter, tumble in the onions and gently sweat for 5-10 minutes or until the onions are all softened and starting to brown then add the garlic.
Pour in the red wine vinegar, and red wine simmer for 15-20 minutes with a lid on then take the lid off and boil until thick and glossy.
This marmalade will keep in an airtight container in the fridge
