Spiced Avocado and Salmon Caviar Rice Papers

Ingredients

 
1 avocado
100g salmon caviar
3 cloves roasted garlic, crushed to a paste
1 small red chilli, finely diced
50g sour cream
10 rice paper rolls
10 cos leaves
¼ bunch of Vietnamese mint
 

Method

 
MIx together the avocado, sour cream, garlic and finely diced chilli until all combined.
 
Gently mix the salmon caviar through the avocado mix.
 
Spread 2 tbsp of avocado mix onto the rice paper then roll up to form a roll.
 
Serve in a cos leaf with Vietnamese mint.
