Spicy BBQ Ribs

Ingredients

 
Ribs
1 Full rack of ribs
2 cloves of crushed Garlic
2 tbsp Brown sugar
1 tbsp dried crushed Chillies
¼ tsp ground nutmeg
½ tsp mixed spice
1 tbsp tomato paste
Salt and pepper
Olive oil
 
Broth
200g cooked black eye beans
½ litre of chicken stock
1 clove of crushed garlic
1 onion, finely chopped
1 stick of celery, finely chopped
2 tbsp tomato paste
Splash of olive oil
1 glass of red wine
 

Method

 
Rub the ribs all over with the spices and allow to marinade for at least half an hour.
 
Heat a large pot add a splash of oil and fry the onions, celery and garlic until softened then pour in the wine and allow to boil then add the tomato paste and chicken stock, tumble in the beans and simmer for 15-20 minutes.
 
Place the marinated ribs into an oven tray baste with olive oil and roast at 200oC for 15-25 minutes.
 
Serve the ribs with the broth.
