Ingredients
¼ Spanish onion, sliced
1 large clove of garlic, chopped
½ red capsicum, chopped
2 fresh tomatoes, chopped
1 long red chill, sliced
¼ bunch fresh mint, chopped
1 glass of red wine
1 tin of chopped tomatoes
Splash of olive oil
Method
Heat a fry pan and add a splash of olive oil then fry the onions and chilli until just starting to brown, then add the capsicums and cook until softened.
Pour in the red wine and allow to boil then stir in the tinned tomatoes, bring to a boil and cook on high heat for about 20 minutes until reduced by half.
Pour into a serving bowl and toss through the chopped fresh tomatoes and mint and serve.
