Ingredients
500g self raising flour
100g melted butter
200g sultanas
½ tsp vanilla paste (or vanilla essence)
4 eggs
200g brown sugar.
Method
Place the eggs and sugar into a mixing bowl and whisk until light and fluffy, then stir through the vanilla, sultanas and melted butter.
Fold through the flour ensuring it is fully incorporated.
Pour the batter into lined muffin tins.
Place the muffin tins into a baking tray and pour in enough water to come half way up the sides of the muffin trays and cover with foil and seal the edges well.
Place into a pre-heated oven at 180oC for 25-35 minutes.
Serve warm with pouring cream.
