Ingredients
4 egg yolks
2 tbsp caster sugar
200ml thickened cream
300g strawberries
1 mango, flesh removed (keep nut for coulis)
Method
Place the strawberries, mango, egg yolks, cream and sugar into a blender and blend until completely smooth.
Pour the mixture into baking paper lined tubes and place in the freezer for at least 2 hours
Remove the parfait from the freezer and place onto serving plate. Drizzle over minted mango coulis as decoration and serve.
Minted mango coulis
Ingredients
1 mango nut (from parfait)
1 whole mango
150g icing sugar
¼ bunch of mint
Method
Remove the flesh from the whole mango and place into a saucepan with the nut and icing sugar, gently simmer until the sugar has dissolved then blend to a smooth sauce.
Finely chop the mint and sprinkle through the sauce.
