Ingredients
1 whole Tailor (@ 300g) cleaned and butterflied
3 tbsp fresh oregano, roughly chopped
80 ml extra virgin olive oil
Juice of 1 lemon
Salt and Pepper
Place the oregano, olive oil, salt and pepper and lemon juice into a bowl and mix until well combined.
Immerse the butterflied Tailor into the marinade and allow to sit for about 20 minutes.
Heat a fry pan until very hot then slide the fish and all the marinade into the pan, cook 1 side for 3-5 minutes then turn over and cook for 1 minute more.
Serve with the warm marinade as a sauce (perfect for dipping crusty bread into.)
