Thick Cut Scotch

Ingredients

 
1 thick cut Scotch fillet
2 tbsp olive oil
Salt and pepper
 

Method

 
Baste both side of the steak with olive oil, salt and pepper, press the salt and pepper into the surface of the steak then cook on the grill section of your BBQ for 3-5 minutes on each side, only turn the steak once and serve with caramelized onions.
 
Caramelised Onions
 

Ingredients

 
4 Spanish onions sliced thin
4 tbsp olive oil
 

Method

 
Heat a fry pan add the olive oil and toss in the onions, cook for 15-20 minutes on a medium heat, stirring constantly until the onions are soft and lightly browned.
