Ingredients
6 sausages
150g self raising flour
100g plain flour
4 eggs
100-150 ml milk
Method
Place the flour and eggs into your mixer and mix until they start to combine, then while still mixing pour in enough milk to form a thick batter, add the salt then turn up to high speed and whisk for 5 minutes (this introduces air into the mix)
Fry the sausages on both sides in an ovenproof fry pan. Pour the batter mix over the top while still hot
Place the fry pan into an oven pre-heated to 250oC for 15-20 minutes or until golden brown on top.
Serve with the gravy of your choice (I used Spanish onion marmalade gravy)
Gravy
100g Spanish onion marmalade
½ litre of stock
2 tbsp cornflour (mixed with equal quantity of cold water)
Method
Place the onion mix and stock into a saucepan and bring to a boil, stir in the cornflour mix until the gravy is thickened and serve.
