Ingredients
1 packet of white chocolate and macadamia cookies
200g unsalted butter
250g cream cheese
4 eggs
200g white chocolate
200g caster sugar
200ml cream
1 tsp vanilla essence
Method
Crush the biscuits until all smooth (except for the macadamias)
Melt the butter and mix thoroughly through the crushed cookies and line the base of a 26cm spring form tin, press it down firmly and refrigerate.
Cream together the eggs, vanilla and sugar then mix in the cream cheese and cream.
Pour the cream cheese mix onto the chilled biscuit base and bake at 180oC for 45-55 minutes
Allow to cool then melt the chocolate and drizzle over the top of the cheesecake.
