Ingredients
1kg apples grated
4 eggs
100g softened unsalted butter
250g self raising flour
150g caster sugar
Zest of 1 lemon
100g sour cream
100ml Midori
100g green pistachio nuts (unsalted)
100g icing sugar
Method
1. Whisk together the sugar and eggs, then add the lemon zest, sour cream and butter. Fold in the grated apple, 50ml Midori and flour.
2. Pour into cup cake lined muffin tins and bake at 180 degrees for 30 minutes.
3. To make the icing, mix together the remaining Midori and icing sugar until a paste is formed.
4. Allow the fairy cakes to cool then stud the top with pistachio nuts and pour over icing.
