Ingredients
1 pork fillet
1 tsp crushed garlic
1 tbsp Worcestershire sauce
2 tbsps tomato paste
1 tsp crushed chili
1 tsp ground ginger
1 tsp paprika
1 tsp mixed spice
½ cup of red wine
Splash of olive oil
Coriander
Method
1. Clean the pork fillet of all sinew and fat and pat dry.
2. Combine all other ingredients in a bowl and whisk together, place the pork fillet into the sauce and marinate 1 hour minimum (overnight is preferable).
3. Remove pork from marinade and bake at 250C for 15 minutes.
4. Pour remaining marinade into a sauce pan and reduce to thick saucy consistency.
5. Slice pork diagonally. Serve on a bed of rice and pour thickened BBQ sauce.
6. Garnish with coriander.
