Ingredients
200g eye fillet
200g of watermelon
100g of cucumber
6 semi-dried tomatoes
1 baby cos
Dressing
1 tbsp of tomato paste
1 tsp of seeded mustard
1 tsp of honey
Squeeze of lemon juice
Splash of white wine vinegar
Olive oil
Method
Fry beef cubes hot & fast.
Mix together melon, cucumber, tomatoes and toss in olive oil.
Place cos lettuce leaves in the bottom of a cocktail glass.
Next layer is the watermelon mix and top off with hot beef cubes.
Pour dressing over the top and serve as an entrée.
