Ingredients
4 eggs
2 tbsps thickened cream
2 tbsps grated parmesan
1 heaped tsp smooth ricotta
½ pork fillet sliced into medallions
½ red chilli finely chopped
1 tsp ground paprika
2 tbsps olive oil
Tomato capsicum and chilli sauce
Method
1. Combine all ingredients in a bowl and whisk until combined.
2. Cook over a low heat until the egg just sets then serve with the spicy pork.
3. Combine all ingredients in a bowl and allow to marinate for at least fifteen minutes.
4. Cook on very hot barbeque for 2 minutes each side then serve with the cheesey omlette.
