Ingredients
1 kg lamb leg steak
4 tbsp curry powder
100g moist coconut flakes
1 tsp dried chillies
2 tsp Always Fresh Minced Garlic
150ml extra virgin olive oil
1 tsp fennel seed
Method
1. Combine the curry powder with the coconut, chillies, garlic, oil and fennel seeds, then rub into the lamb leg steaks.
2. Place the marinating lamb into the fridge overnight.
3. Splash oil into an oven-proof frying pan, bring up to heat. Seal the lamb on both sides the place into an oven set to 190c for 15-20 minutes.
