Ingredients
2 whole eggs
1 ½ tbsp seeded Dijon mustard
1 shallot
2 tbsp cornichon vinegar
Salt and pepper
Up to 500ml canola oil
Method
1. Place eggs, shallot, mustard and vinegar into blender and buzz until a lighter colour is achieved (2-3 mins).
2. Slowly drizzle in oil while blending until required consistency is achieved (the amount of oil used can differ dependant on environmental conditions).
