Ingredients
1kg skirt steak
1 brown onion
1/4 white cabbage shredded
1 stick of celery chopped
1 sweet potato chopped
3 tsps chilli paste
1 piece of star anise
1 piece of lemon grass
100g of button mushrooms chopped
2 litres of stock or water
1 cup of desiccated coconut
Method
Chop beef and lightly sear. Stir in 1 tsp of chilli paste, remove from the pan and place to the side.
Re-heat pan and sear the onions, celery, cabbage, sweet potatoes and star anise then fry untill lightly browned.
Add the chilli paste, lemon grass, star anise and cook for a further 3 minutes, add beef.
Pour over the stock or water and simmer for 2 hours.
After two hours sprinkle in the coconut then simmer for about 15 to 20.
Serve on some rice and enjoy.
