Ingredients
Fish
1kg of fish fillets (serves 6)
150g Tahini
Lettuce leaves
Sweet & sour salsa
2 tomatoes
1/3 of a cucumber
4 spring onions chopped
8 lychees
2 Aways Fresh piquillo peppers
Splash of sesame oil
Splash of extra virgin olive oil
Finely shredded mint
Method
Sweet & sour salsa
Dice and combine all above ingredients
Fish
Place fish fillets into tahini and coat.
Steam them in a bamboo basket with lettuce leaves underneath to stop it sticking.
Steam for 6-8 minutes depending on the thickness.
Serve the steamed fish on a bed of sweet and sour salsa.
