Ingredients
(Serves 4)
700ml dry apple cider (alcoholic)
500g flour
2 eggs
100g grated Parmesan cheese
6 spring onions, finely sliced
Pinch of baking powder
Method
In a large mixing bowl, combine flour baking powder and egg and then slowly whisk in the dry cider until the mixture is lump free. Stir through the spring onion and Parmesan cheese.
Heat a crepe pan and place a spoonful of pancake mixture on. When bubbles form on top, it’s time to flip and cook the other side.
