Ingredients
250g calamari rings
50g rice flour
1 ½ tsp ground white pepper
1tsp salt
Zest of ½ lemon
1 litre oil for deep frying
Method
Combine the flour, salt, pepper and lemon zest in a bowl then dust the calamari rings.
Thread the dusted calamari onto skewers into a zigzag pattern, then deep fry until crispy and serve with honey Dijon mustard mayo as a dip.
Honey Dijon dip
2 tbsp whole egg mayonnaise
2 tsp Dijon mustard
½ tsp honey
Juice of ½ a lemon
Zest of ½ lemon
Small pinch of white pepper
Combine all ingredients in a bowl and whisk until smooth.
