Ingredients
(Makes 6)
150g leftover mashed potato
12 slices prosciutto
80g Bega Stringers cheese, separated into strands
4 spring onions, finely chopped
30g butter
Splash extra virgin olive oil
Salt
White pepper
Method
Mix together the mashed potato, cheese, finely chopped onions and season with salt and pepper, then wrap in two slices of prosciutto.
Heat the butter and oil in a frying pan. Fry the fritters until golden on one side, flip over and repeat.
