Ingredients
(Serves 2-4)
2 roasted chicken breast fillets
100g plain flour
2 tsp baking powder
2 tbsp hoi sin sauce
100-150ml cold water
1-2 litre sunflower oil for frying
Method
Slice the chicken into 2-3cm chunks. Drop the chicken pieces into a bowl of flour, toss them about until well coated and then remove.
With the remaining flour, add the baking powder, hoi sin sauce and whisk in enough cold water to make a runny batter.
Place the chicken pieces into the batter, shake off excess and then drop into hot oil (approx.180°C) for about 30-60 seconds until golden brown and crispy. Place onto absorbent paper.
Serve with a hoi sin dipping sauce.
