Ingredients
(Serves 4)
2 white fish fillets (Basa)
100g rice flour
1 egg (egg wash)
100g pistachio dukka
Salsa
(Combine all ingredients)
1 apple (cored), finely chopped
½ cucumber, finely chopped
3 small radishes, finely chopped
1 spring onion, finely chopped
Splash white balsamic vinegar
Splash extra virgin olive oil
Method
Coat the fillets with rice flour, shake off excess flour and then pass through the egg wash.
Place the fish onto lined baking tray and sprinkle over with dukka to cover.
Cook under a preheated hot grill plate for 10-12 minutes.
