Ingredients
(Serves 2-4)
2 chicken breast fillets
1 mango
1 bunch asparagus
Handful of snow peas
3 spring onions, finely sliced
1 bunch wild rocket leaves
Handful of basil, chopped
2 tsp sesame seeds
3 tbsp sesame oil
50ml water
Method
Smear 2 tbsp sesame oil over the chicken fillets and place onto a hot grill plate.
Grill for approx. 3 minutes on each side to seal and then place into a preheated oven at 200°C for 12 minutes.
Place the mango cheeks and asparagus onto the grill plate for 1- 2 minutes each side.
In hot pan, splash 1 tbsp sesame oil.
Add the spring onions, snow peas and the chopped mango fruit from the nut.
Allow to sweat down.
Add the sesame seeds and water. Bring to the boil and switch off, toss through the rocket leaves and basil.
Serve the grilled chicken with grilled mango and asparagus and pour over the mango and sesame jus.
