Ingredients
(Makes approx. 400g)
¼ Spanish onion, finely chopped
1 clove of garlic, finely chopped
½ cucumber, peeled and diced
1 Roma tomato, diced
1 tbsp extra virgin olive oil
1 tbsp balsamic vinegar
1 tsp chilli paste
Handful of coriander leaves, chopped
Method
Combine all of the above ingredients in a bowl and serve.
