Ingredients
(Serves 4)
1 whole chicken
1 tsp ground oregano
1 tsp ground ginger
1 tsp mixed spice
1 tbsp oyster sauce
½ cup of red wine vinegar
2 tbsp tomato paste
1 tsp paprika
1 tsp crushed garlic
1 tsp brown sugar
Splash of olive oil
Method
Cut the chicken in half down the backbone and remove the breastbone and ribs.
Combine all other ingredients in a bowl and whisk together, place the boned chicken into the sauce and marinate for 30-60 minutes minimum (preferable overnight).
Remove chicken from marinade and bake at 220°C for 30-35 minutes.
Slice chicken into pieces and serve.
