Ingredients
(Serves 4-6)
375g cannellini beans
1 tsp hot cayenne pepper
½ tsp mustard seeds
½ tsp cumin seeds
1 tsp ground coriander
2 tsp garam marsala
1 tsp turmeric
1 tsp chopped garlic
80ml soy sauce
150ml vegetable stock
2 tbsp tomato paste
6-8 spring onions, chopped
1 piece star anise
Splash of olive oil
Method
Place the beans into a saucepan and cover with twice as much cold water, bring to a boil and simmer for 45-60 minutes (adding more water if needed).
Heat your wok and add a splash of oil, toss in all the spices and fry for 1 minute.
Add the spring onions, cooked beans, soy sauce, tomato paste, star anise and vegetable stock then simmer for 10-15 minutes.
