Leek, Tuna & Sweet Potato PieIngredients (Serves 4) 1 sweet potato, pre-roasted at 200°C for
Method Splash a little of the tuna oil into an ovenproof pan and heat. Add the tuna, olives and finely sliced leek and cook until the leeks are softened. Stir in the cream and simmer for 5-8 minutes. Turn off the heat. Peel and slice the roasted sweet potato and layer over the top of the tuna mixture in the pan. Freshly grind pepper over the top and slide under a hot grill for 4-5 minutes.
