Mixed Berry Cheesecakes with Spiced WalnutsIngredients (Serves 4) 4 eggs
Method Heat a pan with the butter and spices. While the butter is melting, stir through the walnuts and 2 tbsp caster sugar. Add the rum and allow the flame to burn off, then set aside. In a mixing bowl, whisk together the eggs and 80g caster sugar. Add the cottage cheese and the mixed berries and combine. Stir through the ground rice gradually. (The berries may give off different amounts of water, so add enough ground rice to give a thick pancake consistency.) Get a low- moderate heat on your crepe pan, then place a spoonful of the berry cheesecake mixture on. Flip after bubbles form on the surface and cook other side. Serve with the warmed spiced walnuts, extra berries and a good dollop of cream. | ![]() |
