Swiss Roll with Apple & Lime JamIngredients (Serves 8-10) Apple & Lime Jam
Method Whisk the eggs and sugar together until light and fluffy. Add the flour a bit at a time until combined. Grease and line a 40cm rectangular baking tray. Pour the cake mixture in and gently spread so as not to knock out too much air from the mixture. Bake in a preheated oven at 200°C for 10-12 minutes. Flip cake out onto a damp tea towel. Remove the baking paper and use the damp tea towel to gently roll the cake up. Allow to cool. Simmer for 8-10 minutes, stirring occasionally. Add water and simmer for another 8-10 minutes, stirring occasionally. Remove the lime zest and cool. Gently unroll the cake. Spread with most of the jam and the whipped cream and then re-roll. Dust with icing sugar and serve.
