White Bean CurryIngredients (Serves 4-6) 375g cannellini beans Method Place the beans into a saucepan and cover with twice as much cold water, bring to a boil and simmer for 45-60 minutes (adding more water if needed). Heat your wok and add a splash of oil, toss in all the spices and fry for 1 minute. Add the spring onions, cooked beans, soy sauce, tomato paste, star anise and vegetable stock then simmer for 10-15 minutes.
