Berry Parfait

(Serves 4)


4 egg yolks
2 tbsp caster sugar
100ml thickened cream
500g berries
Chocolate ganache


Place the berries, egg yolks, cream and sugar into a blender and blend until completely smooth.
Pour the mixture into patty pans and place in the freezer for at least 60 minutes.
Remove the parfait from the patty pan and place onto serving plate. Drizzle chocolate ganache over as decoration and serve.
