Cheese Platter


Blue cheese
Fresh Fruit (I used pears and strawberries)
1 punnet of cherry tomatoes, cut in half
2 sticks of celery, finely chopped
4 spring onion tops, chopped
¼ bunch of chervil
50 ml white wine vinegar
2 tbsp brown sugar
juice of 1 lime
Splash of olive oil.


In a hot fry pan fry add a splash of olive oil then toss in the tomatoes, celery and spring onions and stir-fry for 2 minutes, then pour in the sugar, vinegar and lime juice (add the squeezed lime pieces also) and boil for 2 minutes.
Remove the lime pieces, stir through the chervil and serve warm.
Take your cheese from the fridge and leave at room temperature for at least an hour before serving
Serve Plain biscuits and fresh fruit with your platter.
