Chicken and Cashew Balls



500 g chicken mince
½ brown onion, roughly chopped
3 gherkins
100 g cashew nuts
¼ cup parmesan cheese, grated
Salt and pepper
Vegetable oil (for frying)


1 pear
2 truss tomatoes
250 g rocket
¼ lemon juice
¼ cup parmesan cheese, grated
Splash extra virgin olive oil


In a food processor, blitz the onion, gherkin, cashew nuts and parmesan. Add to the mince with a sprinkle of salt and pepper and roll into balls. Deep fry in the vegetable oil.

Toss all the salad ingredients together and serve on a platter with the balls.
