Chilli Haloumi Pasta
1/3 packet fettuccini
5 eye pieces bacon, roughly sliced
2 cloves garlic, roughly chopped
½ red onion, thinly sliced
3 truss tomatoes, roughly chopped
1 red chilli, roughly chopped
Extra virgin olive oil
In a pot of salted boiling water, cook the pasta to the instructed time on the packet.
In a shallow pan with a good splash of oil, fry the haloumi until golden.
In a deep pan with a good splash of oil, fry the onion, garlic, chilli and bacon. Cook until the bacon is slightly crispy, then add the tomato. Add a splash of water and cook until the tomatoes break down.
Toss through the pasta and pop the haloumi pieces on top.
