Demons on Horseback


1 French baguette half, cut into 12 thin slices
12 thin slices salami
12 prunes, de-seeded
1 tsp. peppermint schnapps
60 g marinated fetta, cut in 12 pieces
Pickled ginger


Pour the schnapps over the prunes and set aside for 5 mins.
Layer each piece of salami with a piece of fetta, a small slither of ginger, a prune and roll to secure. Place on each slice of baguette and serve.
