Maple Bacon Quesadilla


3 slices bacon rashers

1 tbsp maple syrup

2 truss tomatoes, sliced

150 g button mushrooms, sliced

2 eggs

80 g cream cheese

80 g cheddar cheese

4 large tortillas


Extra virgin olive oil


Preheat oven to 210°C.

On a baking tray, drizzle the bacon with maple syrup and pop under the grill for 15 mins.

In a pan with a good splash of oil and pinch of salt, tumble in the mushrooms and cook until coloured.

One a baking tray, place one tortilla, layer with tomato, cheeses, mushrooms and repeat to create 3 layers. On the top layer, pour the eggs, cover with last tortilla and cook for 10 mins.

Roughly chop the bacon and scatter over the top.
