6 green apples, core removed and quartered
300 ml dry apple cider
150 g brown sugar
150 g caster sugar (extra for topping)
2 tbsp. vanilla bean paste
200 ml full cream milk
200 g unsalted butter, melted
350 g self-raising flour
Preheat oven to 210°C.
Into a deep pan, add the apples and brown sugar. Reduce the sugar until sticky, then pour in the cider. Add 1 tbsp. vanilla paste and simmer for 10 mins.
Whisk together the eggs, 1 tbsp. vanilla paste, butter, caster sugar and milk. Combine in a bowl with the flour and whisk to form a thick batter.
Spoon the apples into small baking dishes. Simmer the remaining liquid in the pan. Spoon the batter over the apples, sprinkle with sugar and bake for 15 mins.
Once baked, drizzle with simmered liquid and serve.
