Apple Galette

1 red apple, thinly sliced

150 g brown sugar

1 ½ tsp. vanilla bean paste

1 sheet puff pastry

50 g unsalted butter

5 tbsp. icing sugar

300 ml cream


Preheat oven to 180°C.

Into a pan, add the butter, sugar and vanilla. Cook until it turns to a caramel. When ready, add a small drizzle of cream. With a large cookie cutter, cut out 4 circles of puff pastry. Line a baking tray with baking paper, add the pastry circles, layer with apple, drizzle a small amount of caramel on each and bake for 10 – 15 mins.

Whip together the cream, vanilla and 2 tbsp. icing sugar. Once it forms soft peaks, add the remaining icing sugar and stir thoroughly.

Onto a platter, pour the caramel, pop the galettes on top and serve with cream on the side.
