Apple Mousse with Glazed Apple Chips and Honied Midori Aoili

Ingredients

 
6 apples 2 finely sliced, 4 peeled and chopped
4 egg whites
50g butter
Juice of half a lemon
150g caster sugar
500ml cream
2 tbsp gelatin
 
Midori
1 tbsp honey (Pattersons Curse)
Egg yolk
Walnut oil
 

Method

 
Bake sliced apples (sprinkled with caster sugar) at 200c for 10-15 minutes
Heat the butter in a pan and cook the chopped apple for 5-10 minutes add the sugar and lemon juice and cook until combined allow to cool
Whip the egg to firm peeks
Whip the cream
Fold all together, add the melted gelatin pour into moulds
 
Whip the egg yolk and midori together with the honey
Slowly drizzle in the walnut oil.
