Apple Pie

6 Granny Smith apples
2 sheets of short cut pastry
1 sheet of puff pastry
25g unsalted butter
2 tbsp Foodworks Best Buy raw brown sugar
1 Foodworks Best Buy egg (for egg wash)
2 tbsp splash of water


Preheat oven to 180°C
Peel and de-core apples, cut into eighths
Melt the butter and sugar in a frypan, (reserve a teaspoon of sugar for later)
Add apples
Turn to low heat
Add splash of water, place lid on frypan and cook until apples are soft
Line the bottom of your pie dish with 1 sheet of shortcrust pastry and bake for 15 minutes
Remove from oven and allow to cool
Cut the second piece of shortcut pastry into 10cm strips and press into the walls of pie dish.
Brush the folded down pastry edges with egg wash
Pour the cooked apples into the pastry lined pie dish and place the puff pastry on top and crimp edges
Brush the surface with egg wash
Sprinkle ½ tspn of brown sugar over the top
Poke a hole in the centre of the pie to avoid explosion
Bake at 200°C for 15-20 minutes
