Apple Pie

4 green apples, peeled and quartered
2 sheets puff pastry
½ cup raw sugar
½ cup panko breadcrumbs
100 g unsalted butter, cubed
1 egg, beaten
½ tsp. cinnamon powder
300 ml thickened cream
2 tbsp. maple syrup


Preheat oven to 180°C.

In a pan, tumble in the butter and melt. Add the apples and sugar, sprinkle in the cinnamon and stir until sugar dissolves. Add a splash of water, cover and simmer 10 mins. Once simmered, pour in the breadcrumbs and stir. Set aside to cool.

Cut pastry into 4 triangles. Fill each centre with apple filling, fold over, crimp edges and brush with egg wash. Pop in the oven for 20 mins.

Whisk the cream to soft peaks, then pour in the maple syrup. Serve with pies.
