Asian Beef Ball Soup

2 L beef stock

10cm knob ginger

2 red chilli

2 sticks celery

100g bean sprouts

500g minced beef

1 pork chop with bone

4 spring onions

2 carrots

1 bunch coriander

Chinese vinegar


Into a large saucepan, add the celery, spring onions, 1 whole carrot, 1 chilli, 1/2 of the coriander, 1/2 of the ginger and a splash of vinegar. Pour in the stock, add the pork bone and simmer for 15 mins, then remove the vegetables, bone and discard.

In a food processor, add the mince, pork, remaining ginger, chilli, coriander and blitz until smooth.

Roll the mince into balls, add them to the soup broth and cook for 10 mins.

Into serving bowls, add equal amounts of finely chopped carrot, bean sprouts and a generous serving of soup broth and balls.
