Assorted Bruschetta

Garlic Oil:

4 cloves garlic, grated

1 cup extra virgin olive oil


3 French sticks, sliced in small pieces

500 g eye fillet beef

500 g raw prawns

4 chicken breasts

100 g caviar

2 tbsp. mascarpone cheese

2 tbsp. cream cheese

¼ bunch chives, finely chopped

200 g rocket leaves

¼ bunch dill leaves, torn

Extra virgin olive oil


Whisk together the garlic oil ingredients. Brush each slice of French stick with the oil. Slice the beef into small cubes and toss through any remaining garlic oil with the prawns. Place the cubes of beef and prawns onto toothpicks, 1 of each per toothpick.

Sprinkle the chicken breast with salt and pepper, drizzle with oil and BBQ until cooked through and golden.

Grill the bread on the BBQ until golden and BBQ the beef and prawn skewers until just cooked through.

Finely chop the chicken breast once cooked and mix together with the cheeses and chives.

Layer half the French stick slices with rocket leaves and a spoonful of chicken mix.

With the remaining French stick slices, place a beef and prawn skewer on top, garnish with dill and a small amount of caviar.
