2 sweet potatoes

5 tbsp. tapioca flour

1 1 /2 tbsp. molasses

1 cup brown sugar

500 ml coconut milk

Sea salt flakes



Boil the sweet potato until very soft. Remove the skin, then in a bowl mash the sweet potato flesh and mix with the tapioca flour. Onto a sheet of grease-proof paper, mould the mash mixture into very small patties.

Into another pot of boiling water, spoon in the patties and cook until they float to the top.

Into a hot pan, add the molasses, brown sugar and enough water to form a syrup. Simmer until thick. Spoon in the sweet potato patties and stir gently to coat. Leave to soak for 3 – 4 mins.

In a pot, pour in the coconut milk, a splash of water and a pinch of salt. Bring to the boil for 3 – 4 mins.

Into a bowl, place the patties and a generous ladle of coconut milk. Serve immediately.
