Bread and Butter Pudding

10 slices white bread
Unsalted butter, softened
6 eggs
½ cup caster sugar (extra for baking dish)
1 tsp. vanilla bean paste
350 ml thickened cream


Preheat oven to 200°C.
Whisk together the caster sugar, eggs and vanilla. Butter each piece of bread on both sides, then cut each into 2 triangles. Grease a baking dish with butter and sprinkle with sugar. Fill the dish with the bread, pour over the egg mixture, then press the bread down firmly with a plate or spatula. Bake for 15 – 20 mins.
