Breakfast Burger

Ingredients

1 burger bun

Unsalted butter

2 eggs

6 cherry tomatoes

Salt and pepper

2 tbsp. thickened cream

Extra virgin olive oil

Method

Slice the roll horizontally, spread with butter and pop in a pan or on a grill until toasted and slightly golden. Once toasted, remove and set aside.

Tumble the tomatoes into the pan, add a splash of oil and cook until the skin blisters. Remove and set aside, then slide in the bacon and cook until crispy. Remove and set aside.

In a bowl, whisk the eggs, cream and sprinkle in a small amount of salt and pepper.

Add a good amount of butter to the pan and pour in the eggs. Cook until it reaches an omelette-like consistency and fold in half.

Layer the roll with all the ingredients and serve.
