Cheesy Chilli Beef

1 kg minced beef
1 red onion, roughly chopped
400 ml crushed tomatoes
3 long red chilli, roughly chopped
3 cloves garlic, finely chopped
4 mini sweet capsicum, roughly sliced
3 ½ cups cooked rice
180 g haloumi, cut into 4 triangles
2 ½ tsp. smoked paprika
Salt and pepper
350 ml water
Extra virgin olive oil


In a pan with a good splash of oil, fry off the onion, chilli and garlic. When the onion picks up colour, sprinkle in 1 ½ tsp. smoked paprika and tumble in the capsicum. Cook until the capsicum is soft, then remove and set aside.
Add another good splash of oil into the pan and tumble in the meat. Cook until brown, then add the remaining paprika and a good sprinkle of salt and pepper. Pour in the tomatoes and water. Simmer for 15 mins.
Once simmered, return the vegetables to the pan and stir. Remove and set aside.
In another pan with a generous splash of oil, fry the haloumi until golden. Pour the chilli mince onto the rice, layer with haloumi triangles and serve.
