Cinnamon Apple Crumble

100 g unsalted butter
1 cinnamon stick
2 tbsp. brown sugar
2 green apples, cut into 4 cheeks
½ orange, juiced
½ cup almond meal
50 g cranberries
50 g macadamia nuts
30 g flakes almonds
30 g pistachio nuts


In a pan, melt down 50 g butter, brown sugar and half the orange juice. Add the cinnamon stick, then let the mixture bubble until it forms a caramel. Add the apples flesh-side down and cook until slightly soft, spooning the caramel over the top of the apples as they cook.
In another pan, melt down the remaining butter, pour in remaining orange juice and tumble in the cranberries and nuts. Cook until the nuts brown slightly, then sprinkle in the almond meal. Stir to combine.
Place the apples on a platter and pour the excess caramel over the top. Scatter over the nut crumble and serve.
