600 g beef mince
1/2 red onion, finely diced
2 large truss tomatoes, sliced
100 g rocket leaves
3 burger buns, cut horizontally
1 egg yolk
2 tbsp. mayonnaise
Salt and pepper
In a bowl, mix together the beef, ½ of the onion finely chopped, egg yolk and a sprinkle of salt and pepper. Mould into 3 large patties. Drizzle with a small amount of oil and BBQ until until cooked through.
Grill the buns until lightly toasted.
Roughly chop the remaining onion and BBQ until soft and caramelised.
Sprinkle the tomato with salt and pepper and layer the burgers with rocket leaves, tomatoes, patties, onion and a dollop of mayo.
